The tequila-making process at Casa Sauza

We crush the agave plant raw and extract its juice through a process called simple extraction. This method works similarly to an espresso machine, using water vapor to extract the juice. As a result, we maintain the purity of the agave flavor more effectively.

Similarly, instead of masonry ovens, which slow down the process, we use pressure cookers or autoclaves to cook the plant efficiently.
