Since then, the distillery has evolved and become one of the excellent references in tequila production thanks to its innovation; since its foundation, Cenobio Sauza has included new practices in the production process to improve the quality of the drink.

But how have they managed to be a world reference? What innovations have been introduced in this distillery?

The tequila-making process at Casa Sauza

Most of the companies that are dedicated to the production of tequila continue to use a very traditional process for its elaboration. The agave is cooked in masonry ovens, the agave juice is extracted, and the fermentation process begins. But at Casa Sauza, we have been able to create another process for the creation of tequila.

In our case, the agave plant is crushed raw, and the juice is extracted in a process called simple extraction. Similar to an espresso machine where the juice is obtained through water vapor. This means that the purity of the agave flavor is maintained.

In the same way, instead of using masonry ovens, which slow down the process, we have chosen to use pressure cookers or autoclaves to carry out the cooking work of the plant.

That is why our process is so different from that of other distilleries, although the quality is equally good since our innovative process does not affect the quality of the final product; on the contrary, it maintains the flavors of the plant purer.

The fact of having changed how tequila is created has made us the distillery with the most significant innovation today. We focus on all types of palates; hence many people choose our product. It must be taken into account that the profile of the tequila drinker has changed considerably in recent years.

Whereas before, it was a drink consumed by people of considerable age, today there are many palates that enjoy it, from adults to young people who are beginning to try different flavors.

That is why we ensure that our product is of high quality and suitable for all palates.
