One of the myths regarding the tequila-making process it's called the "traditional process."

It is better than most modern processes to extract sugar from the agave piña (fruit/succulent core). Traditional extraction sugar process vs the soft diffuser extraction of agave sugar process

The first difference we notice by comparing the soft diffuser extraction of the agave sugar process vs. the traditional sugar extraction process is that the agave piña fibers do not pass through a cooking process: sugars are extracted from the raw agave with water and steam. The second significative difference it's that the soft diffuser extraction process doesn't put the agave fibers under high pressure; that is to say, a pressing process it's avoided because it may extract other compounds and elements that could add bitter notes to the agave juice.

The principal reason for using the soft extraction of agave sugar process, it's to be able to offer our clients a tequila that keeps the fresh flavor of agave, which is achieved with a process without cooking, boiling, or pressing. Using our process, we can keep the basic notes of the raw agave, and maintain the purest herbal level of agave with softer and fresher notes until the product is finished.

By not pressing the fibers, we avoid bittering the product, extracting compounds with flavors that we consider shouldn't be present in a tequila. A well-known example is that when it's cooked in the traditional process of the agave piña, some of the sugars are "burned" and generate bitter aromas and flavors.

In our process, it's more important to take care of the purity level of tequila and pay special attention to possible animal, machinery, and bacteria pollution. We look after elaborating on a tequila that keeps the original flavor of agave in the purest possible way without having lactic or bitter notes from other sources that are not the agave piña.

Production benefits of the soft sugar extraction process from agave

One of the benefits we get is having a bagasse with fewer sugar residues at the end of the process, this way we make it more efficient and environmentally friendly when the fibers are recycled.

Our process produces a juice that doesn't have different cooking and boiling levels; it is very homogenous and has better quality than the one that comes from agave piñas with different cooking levels.
