This recipe serves 3 people
Preparation time: 35 minutes
Ingredients
- 200 g smoked salmon
- 4 flour torillas
- 1 Tsp chopped capers
- 1/2 an avocado
Sauce
- 1/4 garlic clove
- 1/4 red onion
- 200 ml chicken broth
- Salt (to taste)
- Chives (to taste)
- Enough oil to fry

Preparation
Cut the salmon in strips, mix with the capers and then distribute this mixture on the tortillas as to make a salmon "burrito". Use wooden toothpicks to hold them tight and fry immediately. Place on paper towel and set aside.
Sauce
Remove the garlic's skin and fry for 5 seconds (burnt garlic is no good). Blend the avocado, onion and chicken broth together. Season with salt and chives to taste.

Plating
Cut the chimichangas diagonally. Spread the sauce in the plate and place the chimichangas on top, as if following a lineal pattern, like a stairway.
You're done!
