Distillation and the Designation of Origin of Tequila:

The distillation of blue agave to produce tequila has a long history. By the end of the 16th century, the Spanish introduced the distillation process in Mexico. In 1974, thanks to the efforts of Don Francisco Javier Sauza, the Mexican government established the Tequila Designation of Origin, which protects and regulates the production of tequila, ensuring its quality and authenticity.

However, with the growth of demand and the expansion of the industry, modern technologies have been implemented for its production, always maintaining quality and the traditions rooted in its preparation.

The tradition of more than five generations of tequileros has allowed us to innovate and improve our processes, achieving the Evolution of tequila.
